I’ve never made a casserole, never mind focusing on a keto casserole, until recently.
Now I’m in love! The casserole is the perfect answer to yesterday’s left overs.
I could tell you that you can pretty much make a casserole out of anything, and even still going through casserole recipes I get new ideas.
Then I found out you can do casseroles in a slow cooker!
Ok, I realize that might be obvious for most people, since the definition of casserole is something that is cooked slowly in an oven.
But I had no idea.
The best thing about keto casseroles is that you can create some amazing substitutes/alternatives to higher carb foods. Like Pizza!
Cravings are going to happen, the trick is to have an adequate substitute for when they do.
Check out the recipe for pizza casserole or the chili hot dog casserole. OMG! Enjoy.
Nacho Chicken Keto Casserole
Read the full recipe with full nutrition breakdown and step-by-step pictures over at: Ruled.me.
This is a Southwestern-esque take on Shepherd’s Pie. It’s got a great heat coming through from the chili seasoning, a good balance of acidity and sweetness from the tomatoes, and plenty of cheese to boot. The cauliflower on top just adds a layer of fluffy goodness that lightens up what might be considered a heavy dish.
This makes a total of 6 servings of Nacho Chicken Casserole. Each serving comes out to be 426 Calories, 32.2g Fats, 4.3g Net Carbs, and 30.8g Protein.
